Who says you have to be a vegetarian to enjoy tofu? This protein-packed lunch is so delicious and so healthy! It was easy to prepare and took around 5 minutes to cook- does it get any better than that?
What you'll need:
1 package silken tofu, drained and chopped into cubes
2 stalks of celery, sliced
3 scallions, chopped
4 mushrooms, sliced
1 tbsp slivered raw almonds
1 chipotle pepper in adobo sauce, seeded and diced
1 tbsp adobo sauce
2 cloves of garlic, minced
1 tsp white distilled vinegar
1 tsp balsamic vinegar
salt & pepper to taste
1/4 tsp sesame seed oil (for taste)
What to do:
Set aside tofu cubes in a bowl and toss together with the white and balsamic vinegar. Spray a skillet with non-stick cooking spray and toss in the celery, scallions, mushrooms, almonds, chipotle pepper, and garlic. Cook until celery is softened (about 3-4 minutes). Toss in the cubes of tofu and the adobo sauce and let cook for just a few minutes. Once it's done, I like to drizzle on a tiny bit of sesame seed oil to give it some flavor. Salt and pepper to your liking and voila :)
