The Lettuce-Less Salad

I feel like washing lettuce takes the most time when preparing a salad. So, when I'm in a hurry and want to whip up a quick lunch I leave out the lettuce and just go for the toppings. Just chop everything up, drizzle on some dressing, toss it together, and enjoy :)

What you'll need:
  • 1/2 orange bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 red onion, diced
  • 1 scallion, chopped
  • 1/2 tomato, diced
  • 1/2 cucumber, diced
  • 1/4 cup reduced-fat feta cheese
  • 1/4 avocado, dice
Dressing:
  • juice of 1/2 a lemon
  • 1 tbsp balsamic vinegar
  • salt and pepper, to taste
What to do: 
Mix all ingredients together and voila- it's that simple.
