
I love when I can toss a bunch of stuff in a pan, throw it in the oven, and go about my day. Obviously that's not the case here... But at least you have about 6 minutes or so to do something productive while the omelette is in the oven :)

Spray the bottom of an 8 or 9 inch round baking pan with non-stick cooking spray. In a separate bowl, crack the eggs, add salt and pepper, and whisk together. Pour eggs into baking pan, evenly spread out spinach leaves while pressing them down so that they are somewhat covered with the egg mixture. Place in the oven at 350 degrees for about 5-7 minutes. Remove pan, layer on slices of tomato, place back in the oven and broil the top for just a few minutes. Bon Appetit :)
