
Delicious eggs & hash browns without the saturated oil, fried butter, & icky white starchy potatoes.
What you'll need:
1/2 sweet potato, grated
1 whole egg
5 egg whites
1 tsp 7-spices
salt, to taste
What to do:
Mix in the 7-spices with the sweet potatoes and spread it out onto a sprayed baking pan, making a thin layer. Bake for 10 minutes at 350 degrees. Broil for 2 minutes. While the potatoes are baking, whisk together the eggs and salt. Spray a muffin pan with non-stick cooking spray and evenly separate the eggs into 6 different portions. When the potatoes are done (they should feel semi crispy), separate them evenly on top of the raw eggs and place in the oven until the eggs are cooked through. Top with a dollop of nonfat plain yogurt and chopped scallions.
